Lotus Paste

I find the store bought lotus paste are abit too sweet, the thought of making lotus paste for mooncake have been wondering in my mind for the pass few weeks, found some time on Saturday late afternoon, quickly cook it before the mood goes away...

XO sauce

Attempt 1 portion of the xo sauce from the lesson in Chef cooking studio, forgot to buy chilli padi on the day that I planned to cook the sauce so this batch of sauce is not as spicy as those that we tried from the class but I like it. Its not a difficult recipe but cutting the yunan ham and salted fish really push my arm power to the limit...



XO sauce is like a very useful sauce, besides using it as a dipping sauce, we also eat it with plain rice, and most of all used it for doing dishes like stir-fry asparagus...


This dish do not required seasoning, 6 large prawns, 1 capcicum, some slice carrot and about 6-8 asparagus, stir fry the prawn and vegetables with some oil, stir in a little water then seasoned with one and half tablespoon of xo sauce, stir fry a while and its done. Simple and fast dish.

Pineapple Enzyme

About a month ago, I tried making pineapple enzyme, suppose to harvest it after 2 weeks but was too busy with the vegetable carving that I forgot about it that I kept it another week, the taste was more like wine can't taste much of pineapple probably because I didn't add enough pineapple...

For this enzyme I use 1 unripe pineapple, 1 lemon and about 150g brown rock sugar.

My first attempt on vegetable carving...

My colleague submitted my name at very last minute last week, I never thought I will participate in my company fruit and vegetable carving competition cos I think its very difficult also I've never done vegetable carving before, I went thru the net and found some simple ideas but another colleague suggested to do the parrot if possible as it will score points.

I went back and practise on Friday nite, in a few hours I done the parrot with the help from Kenny. But the part of how to display the parrot was what stress me out, so after searching thru the net and finally this was the end product...



Other entries were very well done, was hoping to get a prize as I have put in lots of time and effort in my display. I was so happy when they told me I won the 1st prize yesterday and I'm really really proud of my display.

Fruit Enzyme

Read about this enzyme sometime ago in another blog which trigger my curiousity to read up more about it. After seeing it again in HKChoo's blog, and her detail explaination on the whole process of making it. I also ask another blogger Nicole for other details as she has some experience in making it.

Finally decided to make it two weeks ago, all the ingredients was just estimation as I didn't expect it to be successful. I use 4 oranges, 1 1/2 lemon, 11/2 pack of brown rock sugar this round. The content of the bottle of fruits on day 1....



I didn't stir the content everyday as I only go home during weekends, so only manage to stir it once a week later. Nicole did warn about content getting mouldy if not stirring it after 3-4 days. It taste and looks ok after 1 week.


This is how it looks after 2 weeks...

The enzyme looks ok and taste sweet with a slight wine smell. Probably the sweetness is from the amount the sugar added, think I added too much sugar. Think it didn't spoilt cos my family got no problem after drinking it....haha.

Xiao Fa Gao, Otah and Or nee

Was quite lazy lately so only made a few dish during the long weekend. Made the super easy xiao fa gao during new year eve's nite hoping for a properous new year...

I use...150gm self raising flour, 80gm black sugar and 200ml + 3tbsp coconut milk


Tried chef yong's otah recipe, feel its abit too soft maybe due to too much coconut milk...

Bought a yam on monday thinking of cooking abacus seed but didn't have time to made it so Kenny suggest to made or nee with it, so manage to cook a simpler version on wednesday with the help of Kenny...
